  7. 1 Diente Ajo
  8. 1 Puntita Pimentón Ahumado
  9. 1 Tomate Maduro
  10. 1 Cucharita Concentrado de Tomate
  11. 1 Limón
  12. 4 Cucharadas Aceite de Oliva
  13. Sal

Instructions to make to make Paella de pulpo

  1. Limpia muy bien el Pulpo bajo el chorro del agua; asegúrate de enjuagarlo bien Pata pon pata
  2. Pon a hervir una cazuela suficiente FUMET BLANCO y cuando hierva sumerge tu Pulpo en 3 veces (asustar); una Vez cocido, (unos 25 minutos para un Pulpo de 500 gr.); sácalo a una Fuente o plato y reserva a temperatura ambiente. Guarda el Caldo de Cocción.
  3. Limpia y pica fino (Brunoise) toda la verdura y el Ajo.
  4. Prepara un buen sofrito añadiendo el Aceite en la Paella y la Verdurita y cocina a Fuego medio/suave hasta que empiece a tomar color.
  5. Adiciona el Pimentón e inmediatamente después el Tomate.
  6. Añade ahora el Arroz a la Verdura y Tuéstalo hasta que empiece a dorar removiendo.
  7. Moja con el caldo caliente resultante de cocer el Pulpo en el Fumet. (las cantidades como siempre cuando hablamos de Arroz); “Doble de Caldo que de Arroz y un poco más”; es aconsejable tener un poco de caldo de más caliente y preparado por si acaso pide un poco más el Arroz.
  8. Exprime la mitad el Limón y remueve suavemente al principio para que se distribuya. Ya no lo muevas más hasta que este terminado.
  9. Cocina durante 15 minutos y deja reposar con el fuego apagado otros 5 minutos más. Los primeros 7 minutos a Fuego Fuerte y el resto a fuego moderado, más bien bajo.
  10. Prueba de Sal antes de que seque del todo y antes de apagarlo (últimos 5 minutos); coloca encima el Pulpo que habíamos cocido para que se caliente.
  11. Puedes añadir unas Escamas de Sal si quieres por encima del Pulpo antes; aunque ya te aviso que el Arroz es bien sabroso y mezclándolo está ideal.
  12. Sirve después del reposo de 5 minutos y a disfrutar!
